The short version

What does hydration mean?

Hydration describes the amount of water relative to the amount of flour. Higher hydration gives a lighter, more open dough — but also needs more practice and usually a stronger flour.

Protein content determines how much water a flour can bind well. Weaker flours prefer lower hydration, stronger flours can handle higher hydration.

A room-temperature rise is quick, while a cold fermentation in the fridge develops more flavour and an easier-to-digest crumb over more time.
